Veggie Pasta Sauce

i just made the most delish pasta sauce!!!
try it!

1 yellow summer squash
1 green bell pepper
3-8 cloves of garlic depending on your taste
italian seasoning
salt
pepper
1/4-1/2 C. soy milk (or cow milk)
1/4-1/2 C. Nutritional Yeast (yellow flakes) or Parmesan Cheese

slice squash and pepper thinly and sautee in enough water to keep them from sticking. sprinkle the italian seasoning over them as they cook.
also peel and slice the garlic cloves and put them in to cook as well.
when the vegetables are done, put them in the blender. put about half of the milk and half of the yeast/parm in also. blend. taste. add salt, pepper, more milk if you need to, more yeast if you need to...
it should still be hot so just pour it over your pasta or rice and voila!
garnish with a fresh parsley or basil sprig and a dash of red pepper.
serves 2 for a main course.

wow that's a lot of garlic! but i love garlic. this sounds delicious, i'll have to try it sometime when i'm not too lazy to cook.
